I’ve looked for different recipes of apple tart but never was quite happy. So I decided to incorporate two recipes from Laduree. The tart base and the pastry cream. The pastry cream is DEVINE! I would probably suggest adding more apricot jam on top the apples to make them shinier.
Ingredients:
Shortcrust Pastry:
250 g of cake flour
125 g of butter
Salt
4 tbsp. of water
2 egg yolks
Pastry Cream:
1 vanilla bean
400 mL milk
4 egg yolks
80 g sugar
30g cornstarch
Topping:
25 g butter
2 apples
1 tbsp Apricot Jam
2 tbsp water

Base de Tarte:
250 g de farinha

Creme de pasteleiro:
1 fava de baunilha
400 mL de leite
4 gemas
80 g de açúcar
30g de amido de milho
Cobertura:
25 g de manteiga
2 maçãs
1 colher de sopa de geléia de alperce
2 colheres de sopa de água
1 copo > 250 mL
