I decided to do a new take on a recipe that I made a long time ago. A recipe that I actually won a prize for.
This mousse cake is small, 18 cm diameter pan. When making the cake, I overestimated the size, so I had to cut it in half. The ratio of mousse cake should be 3:2. You can also try making just the mousse without the cake!
Ingredients:
For cake:
80g of butter
165g of sugar
2 eggs
1tsp of vanilla
1 cup of flour
1 tsp of baking powder
½ cup of buttermilk
For Port Syrup:
1/3 cup of sugar
1/3 cup of Port wine
1/3 cup of water
For Mousse:
250mL of heavy cream
2 egg whites
3 tbsp of sugar
500 g of berries
3 sheets of gelatine
For Decoration:
Berry syrup or jam

Para o bolo:
80g de manteiga
165g de açúcar
2 ovos
1tsp de baunilha
1 copo de farinha
1 colher de chá de fermento
½ copo de leite coalhado
Para calda de porto:
1/3 copo de açúcar
1/3 copo de vinho do Porto
1/3 copo de água
Para Mousse:
250mL de natas
2 claras de ovos
3 colheres de sopa de açúcar
500 g de frutos vermelhos
3 folhas de gelatina
Para a decoração:
Doce de frutos vermelhos ou geleia
1 copo > 250 mL
