This recipe is an Anna Olsen inspired recipe (click HERE for her book), well is practically the same, I made small adjustments. This cheesecake is one of my favorites. The lime flavor and the raspberry’s tartness cuts the sweetness of the cake. It is so yummy. It is quite heavy cake but good nonetheless. Hope you enjoy!
Ingredients:
500 g of cream cheese
2 tbsp of flour
¾ cup of sugar
½ cup of sour cream
3 tbsp of lime juice
2 tsp of grated lime zest
1 tsp of vanilla
2 eggs
1 egg yolk
125 g of white chocolate
1 cup of raspberries
For crust:
2 cups ½ of graham cookie crumbs

500 g de queijo creme
2 colheres de sopa de farinha
¾ copo de açúcar
½ copo de natas azedas
3 colheres de sopa de sumo de lima
2 colheres de chá de raspas de lima
1 colher de chá de baunilha
2 ovos
1 gema de ovo
125 g de chocolate branco
1 copo de framboesas
Para a base:
2 copos ½ de bolacha digestiva moída
¼ de copo de manteiga derretida
1 copo > 250 mL
