This Duck Rice is a Portuguese recipe, there are lots of variances and this is just the way I do it.
Ingredients: (6 people)
1 Duck (For a 2,5kg duck you need 1h for it to be fully cooked)
1 Portuguese chorizo (I personally like the chorizo from the north, try to choose one with less paprika)
1 slice of 2 cm x 10 cm thick bacon
2 cups White long grain rice
Cheese of your liking, I added mozzarella (that’s what I had in hand) but if you want to go full Portuguese, you should choose a Portuguese cheese like Casteloes.
Note: For every cup of rice, you need 2 cups of water, so make sure while cooking the duck you have sufficient water for the rice. If you end up not having enough stock water, don’t worry, you can add just plain water.
Note2: You can add cheese over all your dish since in my house we can’t all eat cheese that’s why I didn’t add it all over.
